Twice Fried French Fries

Ingredients (per person)

  • 1 lbs Russet Potato
  • 1 Litter Canola Oil
  • 1 sprig Rosemary
  • 1 teaspoon Sea Salt


1. Wash Russet potatoes throughly and pat dry with cloth

2. Slice potatoes 1/4 inch across the widest section. Preheat fryer or pot of oil to 300 degrees Fahrenheit


3. Take 1-2 sections at a time and slice again in 1/4  inch across the longest section. (note: if preparing a large amount of potatoes submerge in water to prevent browning)

4. If submerged in water be sure prior to frying to remove all water. Place a small amount in fryer to prevent spill over. fry @ 300 degrees Fahrenheit for 4 min then remove and place on cooling rack and repeat.

5. After cooled completely turn fryer up to 350 degrees Fahrenheit  and fry to golden brown (3-5min depending on mount cooking at each time)

6. toss with Sea Salt and minced rosemary
