A Toast to Peas

Pea Mash:

  • 1 Lbs English peas
  • 2 teaspoons salt
  • 1 small jalapeno, stem removed
  • 2 cloves roasted garlic
  • 1 Tablespoon Honey

Caramelized onions:

  • 1 sweet yellow onion
  • Olive Oil to coat Pan
  • 1 tablespoon salt

To assemble:

  • 16 0z Ricotta Cheese
  • 4 oz Extra virgin olive oil
  • 1 cup blanched sugar snap peas
  • 1 loaf Country bread cut 1/3 inch slices


1. Slice onion 1/4 inch thick, coat large saute pan with olive oil and saute over medium heat until golden brown



2.  Slice bread 1/3 inch thick and lightly toast (Note: be sure NOT to brown bread at this point). Then spread Ricotta evenly across slice.




3. Combine 1/2 of Peas, Jalapeno, Garlic, salt and honey and blend until consistency of oatmeal. Then add remaining Peas add pulse blend to break up whole peas


4. Chop sauted onions and spread on top of the ricotta cheese



5. Spread Pea mixture evenly across all pieces of toast atop of the layers of ricotta and sauted onions


6. Open blanched Sugar snap pea pods and use to garnish on Pea toast and on plate as desired
