Summer Quinoa Salad

Ingredients

  • 1 Cup cooked and cooled Quinoa
  • 1/2 cup garbanzo beans rinsed and de-shelled
  • 1 Avocado
  • 1 Tablespoon Chevre Goat Cheese crumbled
  • 1/4 cup cilantro
  • 1 lemon
  • 1 teaspoon cumin
  • salt to taste
  • pinch pepper

Directions

  1. Remove stems from cilantro leaves, chop fine
  2. Cut avocado in half around the pit, remove pit with spoon remove flesh then cross cut into bite size pieces
  3. In mixing bowl combine all ingredients squeeze lemon juice and toss until evenly coated
  4. chill then serve
