Ingredients:

1 cup almond flour

1 cup coconut flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon palm sugar

3/4 teaspoon salt

1 cup coconut milk, chilled

8 Tablespoons coconut oil, melted and slightly cooled, plus extra for brushing

 

Preparation:

1. Adjust an oven rack to the middle position and heat the oven to 475┬║ F. Line a baking sheet with parchment paper.

2. Whisk the flours, baking powder, baking soda, palm sugar and salt together in a large mixing bowl. In a medium bowl, stir the chilled coconut milk and melted coconut oil together until small clumps form. Stir the coconut milk mixture into the flour mixture with a rubber spatula just until incorporated and the dough pulls away from the sides of the bowl.

3. Using greased hands, shape dough into round biscuit shapes and place mounds onto  the prepared baking sheet, spacing them about 1 1/2 inches apart. Bake until the tops are golden brown and crisp, 12 to 14 minutes, rotating the pan halfway through baking.

4. Brush the baked biscuits with extra melted coconut oil, transfer to wire rack and let cool for 5 minutes. Serve warm.
