For a fun twist on Classic Irish Soda bread try this amazing paleo version.
3 cups Almond flour
1 cup coconut flour
2 Tablespoons palm sugar
1 1/2 teaspoon baking powder
1 1/2 teaspoon cream of tartar
1 1/2 teaspoon salt
2 Tablespoons coconut oil, softened for brushing
1 1/2 cups coconut milk
1 teaspoon lemon juice
2 Tablespoons bacon fat, melted
1. Adjust oven rack to the upper-middle position and heat the oven to 400ºF. Line a baking sheet with parchment paper
2. Whisk flours, palm sugar, baking soda, creme of tartar, and salt together in large bowl. Work the oil into the dry ingredients with a fork until the texture resembles corse crumbs. Stir in the coconut milk and lemon juice with a fork just the dough begins to come together.
3. Pat the dough into a 6-inch round about 2 inches thick, and lay on the prepared baking sheet.
Bake until golden brown and a toothpick inserted into the center comes out with only a few crumbs attached, 40 to 45 minutes, rotating the pan half way through baking.
5. Let the loaf cool on a wire rack for at least 1 hour. Brush with bacon fat before serving.
