Handmade Ravioli

Easy recipe for handmade ravioli that you can add you favorite filling inside.



  • Pasta dough recipe from July 9th , 2014
  • 8 oz Ricotta Cheese
  • 2 Egg Yolks




1.On a generously floured surface split the ball of dough into 2 equal pieces, then roll out dough 1/2 until thumbnail thin

DSCN78192. Repeat rolling of dough to remaining 1/2 of dough


3. In piping bag or gallon zip-lock fill with blended ricotta cheese and dispense 1 Tablespoon evenly across one side of the sheet of dough



4. In small bowl whisk egg yolks until smooth


5. Brush egg yolks along the outside edge where you placed the filling, also in between each filling


6. Fold the empty half of dough evenly over the filled half, making sure all edges meet perfectly



7.  With two fingers in the shape of a V press on the folded edge then meet the tips of those fingers with the pointer finger of your other hand sealing the ravioli

DSCN78388.  Cut and trim ravioli evenly, removing any excess dough

DSCN788110. In a Large pot of salted boiling water cook pasta until it they float (note: try one before removing the whole bunch)
